How to Create an Article?
First,you should (or have to) read New Page Policies. (Maybe you have read it.)
Second, go to Scratch_Wiki:Create an article and put page name.
You have to use Wiki formatting, but don't worry. You can learn in Scratch Wiki:Cheatsheet.

we are 2,379 users, that have made 331,669 edits to 23,945 pages (2,158 of them are articles), and I'm 100% sure that you will make all of those stats a lot higher.

If you want to find pages to edit, then you could look at Articles to expand or Article stubs to find pages that you can improve. Alternatively, you could have a look at Innacurate articles to find places to add references. I also get my own inspiration from Special:Random.
